Esther translates as “STAR” in The Bible. Family and friends happily celebrated Esther Sarabia’s 80th birthday on April 21, 2026. Her actual birth date was April 11, but such an auspicious event for such a delightful lady took some time and planning. Esther and, the love of her life, Gary Huebel retired to Crystal Beach in 2006. They enjoy spending time with children and grandchildren. Esther is extremely proud of her family. Gary is a superb fisherman; Esther admittedly is not. She only caught one flounder, and that was by accident. She claims that when it comes to cooking she just blackens everything. However, Ms. Sarabia successfully raises chickens who supply eggs. Visiting her garden is like opening a door to an enshrined spot in, “The Secret Garden”. It is gorgeous.
Esther graduated from Houston Massey Business College, held several Bookkeeping jobs while attending Houston Community College. She and Gary live in Kona Kai where Esther served as treasurer for many years. Bay Vue Methodist Church enjoys her services as Financial Secretary and Administrative Council Recording Secretary. Ms. Sarabia is on the Board of Directors for Bay Vue’s Second Going Store and volunteers as a cashier. Esther stated,“ I consider Bay Vue Methodist people as my loving extended family”.
Family members Jake Garcia, Trish Garcia-Monet, Guy Burk and Annalia Garcia Burk and famed fisherman Gary joined multiple friends to celebrate this momentous moment in a Esther’s life. Bay Vue members, Second-Going Resale Store volunteers and others gathered to honor her. Jose’s servers did a fantastic job of taking care of such a large group of admirers. Elaine Rollfing and Rita Moseley created their famous cakes for this special birthday party. Several rounds of, “Happy Birthday,” filled the restaurant as Esther blew out her candles.
Like the Biblical Esther, our Esther is a model of courage, faith and duty. She shares those same virtues plus talent and love. Therefore, Esther Sarabia is definitely a “STAR” !
