
I began mine with my favorite pizza. Yep, homemade from scratch. I start off with Jiffy pizza crust mix out of the box. Add ½ cup of water and let it rise. I had all the fixings I needed like spaghetti sauce, onions, turkey sausage, green peppers and mozzarella cheese and an extra sprinkle of cheddar. This is my go to meal when my husband is missing.

You see, this is his annual hunting trip weekend. Although it didn’t really involve hunting. It was a shooting weekend but not harming any living creatures this time. I guess you would be more accurate in calling it a family/guys get together. There were grandsons, sons, brothers, old friends, fathers-in-laws, sons-in-law, cousins, two golden retrievers, and who knows who else. All guys! They rented an exclusive, all you can sleep, rustic wonderland way out in Brady Texas. Wherever in the world is Brady Texas? They had a blast!
As I began this story, my pizza. Right, it was delicious on Thursday night and again on Friday night. Later Friday night, I was sick as a dog, The only thing that kept me from losing my pizza was the fact that I wanted to go shopping on Saturday. I stood steadfastly against the pain and managed to get in some zzzz’s, enough to achieve my Saturday goals.
You see, when my husband is missing, Maezy and I manage to get things done! After her trip to the beach and her breakfast, I ventured out to do my thing All the Way into town, Sam’s, HEB, Dillards, Home Depot, Houston Garden Center and Specs. Not necessarily in that order. But, I was exhausted enough to call it quits and head home.
Somewhere in the back of my mind, I remembered it was SPRING FORWARD! Maezy woke me up around 6am on Sunday morning and the first thing I did was look at my phone. Voila, it was really 7am. I proceeded to go around the house and change all the clocks. That is, the ones I could reach.
Sunday was spent planting all the stuff I got the weekend before and trying to plant all the stuff I got on Saturday. Wouldn’t you know it, a cool front came in Saturday night (along with the time change). After a frigid ride to the beach with Maezy, I bundled up in a couple of sweatshirts and my beanie and braved the cold. In between all that, I managed to cook a pot roast with some potatoes, carrots and onions in anticipation my “missing husband” would be hungry when he got home. I know I was sure hungry after all that outdoor business!
Probably the first pot roast I can ever remember making, but it turned out pretty goodl. Maybe it was the cornbread as an accompaniment that made it taste so good. Comfort food they call it. Whatever, it sure hit the spot!
